I’ve made a habit of calling my (not well) grandma every Friday since we’ve moved back. With each call, I hear her voice getting weaker and can’t help but wonder if that will be the last call. I’ve tried to incorporate something that reminds me of her into our weekends so that she will be a regular part of our family conversations. We’ve read her favorite Dr. Seuss book, laughed about funny memories with her, and today we are baking her chocolate chip cookies. I’ll share a bit of her with all of you:
Chocolate Chip Cookie Recipe:
2/3 cup butter (melt for 30 seconds in microwave on ½ power)
2/3 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt 1 cup (or more, lots more) chocolate chips
3 cups flour
Preheat oven to 375 degrees F (182 C).
Mix all the ingredients together in the order listed above.
Call your mom (this is actually listed on the recipe card),
scoop by teaspoon-ish size on cookie sheet and bake for 8-10 minutes.
Try to take them out just before they look browned and let them finish baking on the cookie sheet while they cool. Enjoy!
